Is Swedish for Christmas. The Christmas smorgasbord does not hold so many kinds as there are in the restaurants. Traditional dishes are served like pickled herring, beet-root salad, liver paste, brawn of pig or chicken, rolled lamb, smoked leg of lamb, Christmas Ham with mustard, prunes and apple sauce etc. There are 3 kinds of bread: thin unleavened bread, wort loaf and Christmas buns, and at side of the bread there is butter, Edamer cheese and soft whey cheese. On the oven you find hot potatoes and hot red cabbage to go with the ham. For drink they have Christmas beer and those who like that can have some spiced vodka with the herring.

Swedish Christmas Kola (Caramel Candy)
Comprises granulated sugar, dark corn syrup, butter, vanilla extract, cream, chopped almonds. Mix all ingredients except the almonds in a large sauté pan, and simmer, stirring occasionally. If you can make a soft ball by rolling it between your fingers, it is ready. Pour caramel onto a large nonstick baking sheet, and sprinkle with chopped almonds. Refrigerate to chill. When partially set, slice into small portions and wrap in wax paper squares cut to fit.
