These Jamaican Christmas Cakes are made from mixed fruits, raisins, rum, molasses, vanilla and wine. Cream butter and sugar in a bowl. Beat eggs thoroughly and add to the creamed butter and sugar. Add 1-cup flour, baking powder and salt. Stir in fruit, rum, wine and molasses until you get a smooth paste. Bake 350 degrees.
- Rich Carrot Ginger Cake
Preheat oven to 350 degrees. Grease and flour round cake pans with Baker's Joy. Mix together flour, sugar, and spices in a large bowl. Add lightly beaten eggs and oil and grated carrots. Pour batter evenly into the two prepared cake pans. Bake in preheated oven. Allow cake to cool, then remove from pan and frost with cream cheese frosting.
- Jamaican Rum Cake
Made from Jamaican Rum, butter and cocoa this is a delectable Christmas cake. Sample the rum for quality. Check it again to make sure it's ok. With electric mixer, beat butter and soda in a large fluffy bowl. Add 2 large eggs, 2 cups fruit juice and beat `till high. Next add salt, cocoa and lemon juice and sample rum again. Fold in chopped butter and strained nuts. Pour the mix in the pan and heat oven.
