Go to any store, you will be boggled by the dizzying array of gift choices. So, if you don't want to send those typically filled-in store bought baskets, you can go for Easter baskets filled with homemade cakes. Easter Coconut Almond Cake
Ingredients:
1 1/2 teaspoon baking powder
6 large eggs
1/2 cup coconut milk
Almond Paste, grated
1 cup granulated sugar
1/2 cup butter
1 1/2 cups all-purpose flour
1/2 teaspoon coconut extract
1/4 teaspoon salt
1 cup sweetened, shredded coconut flakes
For Frosting
1 1/4 cups heavy (whipping) cream
1/4 cup powdered sugar
Method:
- Firstly, preheat the oven to 325 degrees F. Then oil and flour the pan. Beat sugar and almond paste on low speed, until combined into small crumbs.
- Then, put some butter into it and again beat on high until well mixed. Add eggs one at a time, whipping between each addition.
- Then put the coconut extract and beat on high for 3 minutes. In a medium size bowl, whip together baking powder, flour and salt. Add coconut flakes and mix until combined.
- Pour the coconut milk and flour to the prepared almond paste mixture. Mix on low speed until just combined. Pour batter into prepared pan. Bake 45-48 minutes. Cool pan on wire rack for 10 minutes. Chill the cake.
Easter Bunny Cake
Ingredients:
Flaked coconut
Box cake mix (flavor desired)
Food coloring
Red licorice whips
Gumdrops
Method: - Firstly, preheat oven to 350 degrees F. Make the batter according to the directions given on the box.
- Then, place the prepared batter into two 9-inch round cake pans. Bake for 35 minutes or until done. Cool in pans for 10 minutes. Take the cakes out of the racks and let cool completely.
- When chilled cut ears and bowtie out of one of the rounds. Then make a petal shaped cut from top to bottom on right side, then the left of the one round cake.
- These two cutouts will be the ears of the bunny shaped cake and the remaining center piece is the bow tie. Organize the whole cake layer on a long, flat serving platter, adding the ears on top and the bowtie at the bottom.
Ice the cake with the frosting of your choice. Put flaked coconut over the bunny face.
Color the ears and the bowtie with a small amount of coconut pink. Use red licorice for whiskers and gumdrops for the eyes and nose.
