- Pound cakes can be shaped into the form of hardboiled egg whites. The inner part of it can be scooped out to make space for lemon-curd which will resemble the egg yolk. You can store these cakes in a refrigerator, but before glazing do bring it to room temperature. Do the decoration and the glazing part before you serve the cakes otherwise they may become dry if left for a long time after glazing.
- For making Easter egg cakes of chocolate add boiling water to cocoa and stir it well. Let it cool. Mix shortening, cream butter, and sugar in a large mixing bowl till they become fluffy. Beet the mixture properly after adding vanilla and eggs. Mix it with baking powder, flour, baking soda, and salt according to taste. Put buttermilk and the chocolate mixture and blend them well. Add dry ingredients in the beginning and end. Keep egg shaped pans of 9 x 6 inch ready, greased and floured. Pour the mixture into this pan. Now bake it for 60 to 65 minutes on the lowest rack on 350 degrees in an oven. If you are using an oblong pan then bake it for 40 to 45 minutes. After cooling the base of the cake should be trimmed so that the cake sits well. Layers should be trimmed to fit together evenly. Trim the cake again after spreading the chocolate frosting on it.
