is an option for the main course and side dishes. The ingredients are: crisply cooked and crumbled bacon, softened unsalted butter, chopped fresh sage, turkey, salt

and pepper, white and green parts of leeks, fresh sage sprigs, crumbled bay leaves, canned chicken broth, and fresh sage and parsley for garnish. Mix bacon, butter and sage and season lightly with salt and pepper. Pat turkey dry with paper towels and season cavity with salt and pepper. Place leeks, sage and bay leaves in cavity. Loosen skin on turkey breast and spread sage butter over meat, under skin. Place turkey on the rack and set in large roasting pan and rub sage butter over outside of turkey. Set aside butter for gravy; reserve remaining for basting. Position rack in bottom third of oven and preheat. Pour broth over turkey and roast until 180 degrees. Baste at intervals with broth and brush with sage butter. Transfer turkey to platter and let stand. For the gravy, pour pan juices into large glass measuring cup, spoon off fat; discard. Pour juices back into saucepan, add broth and bring to a boil.
Continue to boil until liquid is reduced. Whisk in reserved sage butter, season to taste.
