Strawberry Baked Ham
Ingredients:
5 to 8 pound smoked ham
1/2 cup strawberries, fresh, halved
1 cup water
1 Tbsp Creole mustard
1 cup strawberry wine
Method: Firstly preheat the oven to 350F. Place the ham in a large baking sheet and arrange the strawberries on top. Blend together the wine, water, and Creole mustard together, then pour over the top of the ham, and let it drip down the sides. Bake for 1 hour, basting every 20 minutes. After the ham is baked, slice and serve topped with a Strawberry Sauce.
Strawberry Sauce
Ingredients:
1 pt strawberries
1 tsp ground cinnamon
1/2 cup water
1/2 cup strawberry wine
1/2 cup sugar
Method: In a medium-sized pan, mix all the ingredients together and cook covered over low heat until thickened, at least 3 hours, stirring at regular intervals.
Potato Soup
Ingredients:
1/2 teaspoon ground cinnamon
6 medium sweet potatoes
1/2 cup butter
1/2 cup crushed pineapple
3 eggs
1 cup sugar
1/2 cup grated coconut
1 1/2 cups milk
Grated coconut
Method: Firstly boil sweet potatoes until tender. Peel and mash. Season with cinnamon, nutmeg, and butter. Whip eggs and add to potatoes. Combine with remaining ingredients. Pour into a greased casserole. Bake in a 350 degree F. oven until light brown. Top with a sprinkle of coconut.
