Easter Wheat Pie:
Ingredients:
Crust--1 c flour
2 egg yolks
4 T milk
1/2 c powdered sugar
1/2 tsp vanilla or lemon extract
1/4 c butter
Filling
1 1/2 lb ricotta-well drained
1 lb cooked white wheat
2 c sugar
1/2 c finely chopped citron and orange zest
1 1/2 T orange water
3 egg yolks
3 egg whites
1 c boiled milk (cooled) Cinnamon
Directions:
Sift flour on pastry board-form a well in the center. Drop egg yolks and add butter. Cut into small pieces. With fork blend in butter eggs and flour. Add sugar, flavoring and just enough milk to hold mixture together. Roll on lightly floured board. Fit into pie dish. Save extra crust for lattice work on top of pie Filling--drain ricotta. Add sugar, egg yolks and blend together. Add beaten egg whites. Add wheat, citron orange zest cinnamon, milk and orange water. Blend all together. Pour into pie shell and bake 325 for 1 1/2 hours or until firm in center.
