Thumbprint cookies are the most sought after goodies during the holiday season and though they happen to be age-old favorites.
They have not lost their charm and hence are still very popular and feature among the first few holiday musts on every body's candy priority charts. Easy to preserve and even easier to implement,
these cookies have carved out a niche for themselves in everyone's heart and they essentially remind us of the good times we have had and the good times to come.
They form the best and the safest bets as Christmas showers as they are to every bodies liking and tastes. Don't wait till Christmas to prepare these wonder cookies. Easy to prepare and fun to implement, they add a dash of warmth to any party or occasion. Many variations can be tried out while preparing Thumbprint cookies. If one happens to be a beginner, it's better to stick to the simple recipe for the basic Thumbprint cookies. But if you are bent upon a little innovation and experimentation this festive season and if you are comfortable with baking, try your hand at jam-filled Thumbprint cookies.
Ingredients: -
· 2 large eggs
· 2 cups all-purpose flour
· 1/2 cup shortening
· 1/2 cup light brown sugar, firmly packed
· 1/2 cup margarine
· 1 teaspoon vanilla
· 1/2 teaspoon salt
· 1 1/4 cups finely chopped pecans
· 1/4 teaspoon baking soda
· Jam or preserves
Procedure: -
Cream together the brown sugar, shortening and margarine. Beat in egg yolks and vanilla. Stir in baking soda, flour and salt. Shape the dough into 1-inch sized balls. The next step would be to beat the egg white and dip the balls into it and roll it in finely chopped pecans. The cookies should be placed about an inch apart on the ungreased baking sheet. Press the thumb deeply into the center of each cookie.
Bake it for about 10 minutes till it turns light brown. After you are through with this, remove them from the cookie sheet and let it cool. Fill the thumbprints with jam and desired preserves. This is likely to produce 5 to 6 dozen thumbprint cookies.
Serve them with other festive goodies or gift pack them and pass them off as showers.
